Coconut Quinoa Protein Muffins - A super easy, healthy snack or on-the-go breakfast that is gluten free and ready in 30 minutes! Even my husband LOVES these!

1/3 Cup Quinoa, uncooked
2/3 Cup Light coconut milk
2 Tbsp Coconut oil
3 Tbsp Honey
2 Large eggs
1/2 tsp Vanilla extract
1/4 Cup Sweetened coconut flakes + additional for topping
1/4 Cup + 2 Tbsp Vanilla Whey protein powder + additional for sprinkling over the dates.
1/4 Cup Dates, roughly chopped
