This copycat recipe tastes just like Chipotle's Cilantro Lime Rice and it's so easy to make!!

1 cup Jasmine or Basmati rice
2 cups water
juice from 1/2 a lime
2 tbsp fresh cilantro, minced
2 cups water
juice from 1/2 a lime
2 tbsp fresh cilantro, minced
Combine rice and water in a medium pot.
Bring to a boil, reduce heat to low, cover and cook for 15 minutes.
Turn heat off and let sit, covered for 5 minutes.
Fluff rice with a fork and stir in lime juice...
