Country Potato & Leek Soup

I brought this soup to a craft night with the girls and it was a big hit! If you've never known what to do with leeks, you should try this recipe.

1 onion, diced
3 leeks
1/2 cup but­ter
3 lbs. red pota­toes
1 ½ cup water
1 Tbl. chicken bouil­lon
1 Tbl. bal­samic vine­gar
1 Tbl. rice vine­gar
1/2 tsp. smoked paprika
2 cans evap­o­rated milk
2 Tbl. sugar
In a large pot, place the pota­toes and add enough water to cover by 3–4”. Bring to a boil and cook until a tooth­pick inserted gives a slight resis­tance.
