Country Potato & Leek Soup

I brought this soup to a craft night with the girls and it was a big hit! If you've never known what to do with leeks, you should try this recipe.

1 onion, diced
3 leeks
1/2 cup butter
3 lbs. red potatoes
1 ½ cup water
1 Tbl. chicken bouillon
1 Tbl. balsamic vinegar
1 Tbl. rice vinegar
1/2 tsp. smoked paprika
2 cans evaporated milk
2 Tbl. sugar

In a large pot, place the potatoes and add enough water to cover by 3–4”. Bring to a boil and cook until a toothpick inserted gives a slight resistance.
