Crunchy Baked Onion Rings with Spicy Mayo

These amazingly healthy baked onion rings are extra crunchy and contain no eggs or dairy! Oh and super delicious!

1 large yellow onion (Spanish), cut into 1/2 inch slices
2 flax eggs (2 tablespoons ground flax mixed with 4 tablespoons water)
3-4 cups unsweetened almond or soy milk (enough to cover the onions in a shallow baking dish)
1/4 cup all-purpose flour
1 cup panko breadcrumbs
1/2 cup regular breadcrumbs
2 teaspoons italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon salt
olive oil spray (or vegetable oil spray)
1 tablespoon (roughly) smoked paprika, for sprinkling on onion rings
3 tablespoons Organic Vegannaise
1 teaspoon Sriracha

Soak the onions in almond milk and flax eggs in a shallow baking dish preferably overnight (or at least 4-6 hours). The longer you soak, the more the breading will still to the onions.
