Curry Sauce with Peas and Red Bell Pepper

½ tablespoon olive oil
¼ cup chopped onion
½ teaspoon minced ginger
2 garlic cloves, minced
1 small potato, peeled and chopped.
¼ cup chopped tomato
1 red bell pepper, chopped
½ tablespoon curry powder
½ cup sweet peas
¼ teaspoon salt
Heat olive oil, sauté onion for 1 minute. Add ginger and garlic, sauté for another minute. Add potato, tomato, red bell pepper and curry powder. Cook for 10 minutes, stirring frequently. Add water if necessary. Add peas and cook for 3 more minutes. Season with salt. Puree in a blender.
