Dairy Free Walnut Pesto

On a dairy free diet, still enjoy pesto with this recipe! Also uses walnuts instead of expensive pine nuts. This is delicious served over pasta or drizzled over roasted vegetables.

2 cups of fresh basil
1/2 cup walnuts
2 tablespoons garlic
1/2 cup olive oil
salt and pepper to taste
Add all ingredients to food processor and process until creamy. Sometimes I can use less olive oil so add olive oil in stages. Process ingredients and stop and check and keep adding olive oil until creamy. Can be stored in sealed container in fridge for up to a week. Just stir before serving.
