Dee's Shakshuka

My take on this Shakshuka is a 1 pot dish using my cast iron skillet to cook up a Fire Roasted Tomato mixture infused with garlic, Parmesan Cheese and Italian Parsley. Then some fresh eggs are poached in the scrumptious tomato mixture and served with some nice fresh bread to create one hardy breakfast.

1 Tablespoon, Coconut Oil

1 Can (14.5 oz.), Fire Roasted Tomatoes

2 Tablespoons, Fresh Parsley
