Detox Chicken Soup

With 8 ingredients and made in one pot in 30 minutes or less this soup is quite possibly the ideal recipe to help you start the year off right.

1 tbsp coconut oil (or extra virgin olive oil)
1 lb chicken boneless skinless chicken breast, cut into bite sized pieces
½ tsp turmeric
1 inch cube of fresh ginger, grated
1 large sweet potato, peeled & chopped into bite size pieces
4-5 cups of low sodium chicken broth
1 bunch of kale, stems
removed & chopped
3-4 sprigs of parsley for garnish
