Duck Ragu

A hearty sauce made with fresh duck and winter spices. Perfect for the holidays!

1 tbsp butter
1 duck, deboned, and skinless
1 onion, chopped
1 cup chopped crimini mushrooms
3 cloves of garlic, minced
2 tbsp tomato paste
½ cup red wine
1 cup diced tomatoes
1 cup chicken stock
1 tsp orange zest
½ tsp ground cinnamon
Pinch of nutmeg
Salt & pepper to taste
1 lb parppedelle pasta cooked aldente
