Easy Cheesy Baked Pasta

A pasta dish that is super easy and quick to make. It is also very delicious.

2 tbsp. extra virgin olive oil
1 tbsp. minced garlic
2-14 oz. cans of Red Gold diced Italian tomatoes
1 tsp. dried oregano
1/2 c. sliced mushroom
1/4 c. diced green onion
S&P to taste
1 lb. rotini pasta
8 oz. mozzarella cheese, cubed
2/3 c. parmesan
Heat oil in skillet. Add garlic and cook over medium high heat, 1 min. Add tomatoes, oregano, mushrooms, and green onions and simmer rapidly, stirring occasionally until thickened, add S&P to taste, 15 min. While you are waiting on your sauce to thicken, start cooking your pasta, al dente, approx 9 min. Tip: add a pinch of salt to your water to add flavor to your pasta and make sure your water is boiling before you add the pasta. Toss pasta with sauce. Place half of pasta in an oiled 9×13” dish. Cover with half parmesan and half mozzarella. Top with remaining pasta, then parmesan and mozzarella. Bake at 400° for 15 minutes. Enjoy with some baked Italian bread and a salad.
