Easy Chicken Parmesan Casserole

An extremely easy, extremely delicious Italian entree!

1.5 pounds chicken breast, chunked
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon red pepper flakes
1 teaspoon basil
1 teaspoon Italian seasoning
1/2 cup yellow summer squash, sliced
1 cup zucchini, sliced
Pasta sauce, to taste
1 cup mozzarella, shredded
3/4 cup Parmesan, shredded
5 oz bag of Italian croutons, crushed
1. Heat oil in skillet. Saute garlic and red pepper until starting to brown. 2. Add chicken and remaining spices. Stir fry until almost done. Add vegetables. 3. Continue stir frying until the chicken is just cooked and the veggies are beginning to get tender. 4. Transfer the chicken/veggie mixture to a casserole dish. Top with desired amount of pasta sauce. 5. Add a layer of mozzarella (about 3/4 cup) and Parmesan (about 1/2 cup). 6. Top with croutons. Sprinkle remaining cheese on top. 7. Bake at 350 degrees Fahrenheit for 20-30 minutes or until lightly brown and bubbling on top. 8. Enjoy alone or with garlic toast!
