Easy Gazpacho

A crisp & refreshing gazpacho recipe made with tomatoes, peppers, cucumbers, onions, and jalapenos.

1 1/2 pounds of tomatoes (about 6 small) finely chopped and cored
1 cup tomato juice
1 red pepper, finely chopped
1 medium cucumber, peeled, finely chopped
1/2 cup finely chopped red onion
1 small jalapeño minced
1 garlic clove, minced
1/2 teaspoon cumin
1/4 cup olive oil
2 teaspoons balsamic vinegar
2 teaspoons Worcestershire sauce
1 1/2 tablespoons lemon juice
1 teaspoon sea salt
