Easy Greek Quinoa Salad

Quick and easy Greek quinoa salad that is great as either a side dish or your main meal. Plus it can be made ahead, and the leftovers are great for lunch!

For the salad:
2 cups cooked quinoa
2 cups chopped cucumber
1/2 cup sliced black olives
1 yellow pepper, chopped
1/3 cup chopped red onion
2 cups quartered grape tomatoes
1/2 cup crumbled feta cheese
For the dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 cloves garlic, minced
1 lemon, juice and zest
1 teaspoon dried oregano
3/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
