Easy Prosciutto Wrapped Stuffed Chicken Breast

Simple version of a Prosciutto wrapped chicken breast that is stuffed with ricotta and mozzarella cheese. Naturally gluten free!

3 oz Package Sliced Prosciutto – Need 2 slices per Chicken Breast
3 Chicken Breasts
1/2 cup Ricotta Cheese
1/4 – 1/2 cup Shredded Mozzarella Cheese
1 egg yolk
Olive Oil
Salt and Pepper
Oven safe skillet, such as a cast iron skillet
Preheat the oven to 375 degrees Fahrenheit Add the ricotta cheese, mozzarella cheese, and egg yolk to medium bowl and stir until combined. Slice each chicken breast down the long side partially through the middle to create a pocket. Stuff each chicken breast with the cheese mixture. Layout two pieces of the prosciutto side by side so they are slightly overlapping. Make sure your stuffed seam on the chicken breast will be covered by the prosciutto, to keep the stuffing from seeping out, and wrap the chicken breast with the prosciutto. Repeat with each chicken breast. Put a tooth pick through the side of the chicken with the stuffing seam. Coat a oven safe skillet with oil and heat over medium heat. Once the skillet it hot, add the chicken and pan sear on one side and then flip the chicken breasts. It\\\'s easiest to use a pair of tongs to flip. Put the pan in the pre-heated oven and cook until the chicken is cooked throughout. About 25 minutes. Pull from the oven and serve.
