Easy Quick Raisin Bread

A quick raisin bread that is yummy alone or served with cream cheese or butter.

1 cup raisins
1 tsp baking soda
1 cup boiling water
1 1/2 cup all purpose flour
1/2 cup granulated sugar
1/2 tsp cinnamon
1/2 tsp salt
1 egg, beaten to blend
1 tablespoon oil
Combine raisins and baking soda in a small bowl. Add boiling water; cool for 30 minutes. Preheat oven to 350 degrees. Grease and flour 9 x 5 inch loaf pan. Mix dry ingredients in bowl, stir in egg, oil, and raisin mixture. Pour into prepared pan. Bake until golden brown and tester inserted in center comes out clean, about 40 minutes. Cool 10 minutes in pan.
