These Easy Roasted Vegetables are lightly seasoned and full of flavor. A cinch to make and the perfect side dish to just about any meal.

1 cup sweet potatoes peeled and diced
1 cup eggplant diced
1 cup zucchini diced
1 cup summer squash diced
1 cup green beans cut into 1 inch pieces
1 cup red onion sliced into wedges
2 tbsp olive oil
seasoned salt to taste I use one that doesn’t contain sugar
