Edamame Stew with Pita Bread

A delicious combination of edamame, zucchini, tomatoes, onions, and seasonings served over farro and with a side z pita bread.

- 1 ½ cups frozen, shelled edamame
- 1 ½ cups farro, uncooked
- 1 ½ teaspoons olive oil
- ½ large onion, chopped
- 1 large zucchini, chopped
- 1 tablespoon minced garlic
- 1 teaspoon cumin
- ¼ teaspoon cayenne, or to taste
- 1 (14 ounce) can petite diced tomatoes, 1-2 tablespoons of the juice drained
- 2 tablespoons cilantro, chopped
- 1 tablespoon lemon juice
- 4 4” pitas

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
