Quick and Easy Breakfast. Use up some of those garden veggies! Can use whichever veggies you have, this time I used bell pepper, tomatoes, and spinach but have used mushrooms and zucchini before.

4 eggs
large handful of spinach
1/2 cup chopped tomatoes or cherry tomatoes
1/2 cup any color bell peppers
1tsp. fresh or dried rosemary
salt and pepper to taste
olive oil forskillet

Heat oil in skillet
Whisk eggs and add to skillet
Add vegetables, rosemary, and salt and pepper
Cook until eggs are set and vegetables are tender
