It’s taken me a long time to become an eggplant eater. It all happened when my husband and I ate at a Turkish restaurant in town and I ordered the baba ghanoush for an appetizer. It wasn’t the kind that’s all pureed like hummus – it was more chunky with actual pieces of egg plant. It was really good. 1/2 large eggplant or about 2 cups, chopped into cubes
1 pound button mushrooms, chopped
2 bell peppers of your choice
3 slices of bacon, chopped into small bits
