Do you love eggplant? I absolutely love it!! I think it’s probably my most favorite vegetable. Eggplant is so versatile and can be cooked many ways; baked, broiled, fried, steamed. I wouldn’t want to eat it raw though as it can be very bitter. It’s very low in calories with only 20 calories per cup. 3 medium eggplants sliced in ¼ inch slices
3 medium-large tomatoes, sliced in ¼ inch slices
1 (24 oz) jar of your favorite Marinara sauce
8 oz shredded low fat mozzarella cheese
olive oil cooking spray
