Cucumber Salad is easily customizable which means it can meet everyone’s personal tastes. Hate green pepper? Leave it out and add in a tomato instead. Not a big onion fan…not to worry it’s not a must. I have even seen this salad with carrots in it (while I am not a fan but to each their own).

3 cucumbers
1/4 – 1/2 purple onion
1 green bell pepper
2 cups white vinegar
4 TBSP water
salt and pepper to taste

1. Combine vinegar and water in a bowl.
2. Slice cucumbers, onion and bell pepper and combine with the liquid ingredients.
3. Give a couple dashes of salt & pepper to taste.
4. Chill until served.
