Fresh Vegetable Lasagna

A nice alternative to classic lasagna, packed with vegetables and using a white sauce instead of a red sauce.

1 8 ounce box of lasagna noodles (I used the kind you don't have to boil)
1 Red Bell Pepper, chopped
1/2 large onion, chopped
4 carrots, chopped
2 cups fresh spinach, chopped
2 cloves garlic, minced
2 Tbsp butter
3 cups heavy whipping cream
3 cups shredded Parmesan, Romano Cheese
