Gluten Free Danish Aebleskiver Breakfast Popovers

Every Christmas morning we would enjoy a piece of our Danish heritage. I was thrilled when I learned how to make this Christmas breakfast favorite gluten free.

3 eggs
2 tsp sugar
½ tsp salt
2 cups buttermilk
2 cup gluten-free flour
1 tsp baking powder
1 tsp baking soda
Beat egg yolks. Mix sugar, salt and milk. Add gluten-free flour, soda and baking powder, which has been sifted together. Last fold in stiffly beaten eggs. Place small amount of shortening in each cup of the aebleskiver pan and fill 2/3 full of batter. Bake other side. Sprinkle with powdered sugar and fill with jam.
