Gluten Free Granola

This granola is very easy to make - it literally only takes a few minutes to throw together & you're done! It tastes great as a cereal with milk poured over it, or as a yogurt topping. The add-ins are limitless - coconut, raisins, nuts, chocolate chips....

7 cups gluten free rolled oats

1 cup coconut oil

1 cup honey

1/2 cup brown sugar

4 teaspoons vanilla

2 1/2 teaspoons cinnamon

3 cups Craisins

2 cups sliced almonds
Preheat oven to 375 degrees (F). Heat coconut oil, honey, and brown sugar in small saucepan and bring to a boil. Once mixture boils, remove from heat. Stir in vanilla and cinnamon. Place oats in a large bowl. Add honey mixture to oats, stirring to coat. Spread oats over two 9x13 inch baking dishes. Bake for 10 minutes. After 10 minutes, stir and return to oven. Turn oven off and allow oat mixture to sit for several hours to overnight. Add cranberries and almonds. Store granola in airtight containers.
