Finally! A Gluten-Free Cake Batter Ice Cream that those with Celiac or a gluten-intolerance can enjoy! Super easy, no-churn Icecream only takes a few minutes to whip up. Only 4 ingredients plus frosting swirl. Gluten-Free Birthday Cake Batter Ice Cream!

For the Ice cream:
2 c. whipping cream, whipped (about 5c. whipped)
1 can sweetened condensed milk
1/4-3/4 c. rice flour blend (or less, I like mine to taste really "batter-y") http://myrecipemagic.com/recipe/recipedetail/glutenfree-rice-flour-blend
1 tsp. vanilla
1/4 tsp. salt
Sprinkles (optional and as desired)

For the Frosting Swirl:
1/4 c. butter, softened
2c. powdered sugar
1/4 c. heavy cream
1 tsp. vanilla
A few drops of food coloring, optional
