Gluten Free Pasta con Tonno(Tuna)

This pasta with tuna is one of my favorite pastas that my mom made but I substitute the regular pasta for the gluten free kind. It's just as delicious!

1 can of tuna in olive oil
1 can of whole peeled tomatoes (San Marzano), crush lightly
2 tbs of capers
2 tbs of Italian black olives (the wrinkling looking kind with the pits removed)
2 tbs of extra virgin olive oil
1 small onion, peeled and chopped
1 pound of Gluten Free spaghetti or linguine
White wine
salt and pepper to taste
Red pepper flakes
Pour some extra virgin olive oil into a non stick skillet. You want to cover the bottom of the skillet somewhat. Turn on the heat to medium. Saute the chopped onion. Once transparent, add the red pepper flakes, black olives and the capers. Stir that together a little before adding the canned tuna (1 min ). Drain a little bit of the oil from tuna can, and the add the tuna into the skillet. Next add some white wine; pour once around the skillet. Once the wine evaporates, add the crushed peeled tomatoes (leave the excess pulp out, just use the tomatoes). Add some salt and pepper to taste and cover skillet. In the meantime, boil a pot of water for the pasta (pot of water should be on while preparing the sauce above). Depending on the brand of pasta you use, may take up to 10 minutes to cook. Pasta should be aldente. Do not overcook. Once cooked, drain, and place pasta into the skillet with tuna mixture. Mix it all together. Turn off flame. Serve.
