10 small dates soaked overnight in cold water or 10 minutes in boiling water, drained
2 tablespoons cocoa powder
1 teaspoon baking powder (ensure gluten-free if necessary)
1/2 teaspoon vanilla extract
Pinch of salt
40 g (1.5oz) dark chocolate chips or chunks* (ensure dairy-free if necessary)
To assemble the sandwiches:
5 scoops ice cream
