Make quick and delicious vanilla wafers that are better than anything you can get at the store. Made with gluten free flours, vegan butter, almond milk, and vanilla, these wafers are easy to make and fit into both vegan and gluten-free diets.

1/3 cup brown rice flour
1/3 cup white rice flour
1/3 cup sweet rice flour
1/3 cup tapioca starch
1/2 teaspoon xanthan gum
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon kosher salt
8 tablespoons vegan butter at room temperature
1/2 cup brown sugar
1 tablespoon cornstarch + 2 tablespoons of water
4 teaspoons vanilla extract
2 tablespoons almond milk
