Grannies Banana Luncheon Loaf. A moist perfect loaf of banana bread.

1/2 cup Coconut Oil Or Shortening (Original recipe calls for shortening.)
1 cup Sugar
2 whole Eggs
4 whole Medium/Large Banana's Mashed (about 1 1/3 cups.)
2 cups Flour (I used 1 cup whole wheat pastry flour and 1 cup unbleached all purpose flour)
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon Salt
1/2 cup Chopped Nuts, Optional
Grease a 9"x5"x3" loaf pan. Beat coconut oil or shortening while slowly adding sugar. Beat until well creamed. Add eggs one at a time beating well between each addition. Add mashed banana's and blend...
