The perfect way to eat eggplant!

1 Large eggplant (rinsed)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1 teaspoon sea salt
1 teaspoon black pepper
2 Large garlic clove (crushed with a knife)
