Grilled Chicken Marinated in a Gluten Free Yogurt Curry Sauce

A deliciously fragrant marinade perfect for just about any protein you have in mind. Grill this over an open flame for moist, flavorful chicken the whole family will enjoy.

1/4 cup of finely diced Red Onion
3 Tbls. finely chopped Cilantro
2 Tbls. Apple Cider Vinegar
2/3 cup Plain Greek Yogurt (gosh I really do use it a lot don't I?)
1 Tbls. Really Good Curry Powder (or a couple Tbls. if not so potent)
1 Tsp. Smoked Paprika
1 Tsp. Onion Powder
1 Tsp. Garlic Salt
1 Tsp. Cumin
1 Tsp. Cayenne Pepper (Ground, you can use less if you're not a fan of spicy food)
1 Tsp. Black Pepper
2 Tbls. Melted butter (olive oil would probably work well but I liked the browning that the butter allowed for)
1 Tsp. Salt
Mix it all together and all the meat (chicken or pork would both be fab. could even probably do firm Tofu?) marinate for at least 30 mins to 1 hour. Heat the grill to high and slap the chicken on the grill....
