I really like eggplant but I had run out of ways to cook it, I made the fried eggplant and eggplant Parmesan and a few other recipes but then at our house we got tired of them. This is definitely on the to make list. .INGREDIENTS
6 tablespoons virgin olive oil
5 garlic cloves, minced
1/8 teaspoon red pepper flakes
1/2 cup plain whole-milk yogurt
3 tablespoons chopped fresh mint
1 teaspoon grated lemon zest plus 2 teaspoons juice
1 teaspoon ground cumin
1/2 tsp ground cayenne pepper
Salt and pepper
