Healthy Cherry Ripe Bars

I’ve had this in my head for so long, and I’m so happy I finally DID ITTTTT!!! Tastes JUST LIKE CHERRY RIPE I could pass out from excitement! And the best part? They’re HEALTHY! Well….ok, healthier than the cafe versions!

1 can Chickpeas
1 1/2 cups quick oats
1 can pitted black cherries in syrup
3/4 cup desiccated coconut
1/2 cup natural sweetener/sugar of choice
Pinch salt
1 tablespoon coconut oil, melted
1 teaspoon coconut extract
1 tablespoon honey
1/2 cup fresh pitted cherries
TOPPING:
1/4 cup semi sweet/dark chocolate, melted
Preheat oven 200C | 390F. Spray a 9×9 inch baking pan with cooking spray, wipe excess with paper towel and set aside. Throw all ingredients INCLUDING cherry syrup (except melted chocolate) into a food processor and blend really well until smooth — about 2 minutes. Remove lid and scrape down the sides to ensure all ingredients are blended. Process again for a further minute. The batter will be quite thick. Do NOT add extra liquids! Pour batter into prepared pan. Bake for approx 20 minutes (depending on your oven) until a toothpick inserted into the centre comes out clean. They are VERY moist when taken out, but they will set and firm as they cool! Don’t over cook these – or they will become dry. Once cooled, spread melted chocolate over the top.
