Healthy Macaroni Pasta Salad

This macaroni salad is the perfect dish to bring to a BBQ or summer party. It is loaded with healthy veggies and has a lot less fat and calories than most BBQ sides. Bring this macaroni salad to your next gathering and you and your friends/family can feel less guilty loading up your plate (which you will definitely be doing once you give this dish a try!)

16 oz uncooked elbow macaroni noodles
2 cups grape tomatoes, cut in half
1 1/2 cups zucchini, sliced and quartered
1 1/2 cups cucumber, sliced and quartered
1/2 cup red onion, finely chopped
1/2 cup light mayonnaise (Hellman's)
3 Tablespoons red wine vinegar
1 Tablespoon Dijon mustard
1 Tablespoon lemon juice
1 teaspoon oregano
2 teaspoons garlic powder
salt and pepper to taste
Optional add ins:
red and yellow peppers
fresh broccoli
black olives
