Healthy White Chocolate Carrot Cake Blondie Bars

A healthy chocolate carrot cake made with rolled oats and fresh medjool dates covered with a cream cheese greek yogurt frosting.

1 cup (90g) rolled oats
1 cup (140g) plain unbleached whole wheat flour (spelt or all purpose are fine)
1/4 cup (50g) firmly packed brown sugar
4 tablespoons granulated sweetener/sugar of choice
6 pitted fresh medjool dates
2 tablespoons (40g) light butter/coconut oil
1 heaping teaspoon ground cinnamon
1/2 teaspoon all spice
1/2 cup (160g) low fat vanilla greek yoghurt
1/2 cup unsweetened almond milk
1 cup grated carrots
1/4 cup (40g) white chocolate chips/bits
FROSTING:
3 tablespoons room temperature low fat cream cheese
2 tablespoons low fat greek yoghurt
2 teaspoons sweetener/icing mix
