Hearty and Healthy Hamburger Soup

Hamburger soup is a hearty yet healthy meal that can take you through a large family dinner or several meals during your week. It is full of vegetables and flavored with tomato and beef broth for a delicious soup that comes together in no time.

1 tbsp olive oil
1 lb ground beef (grass-fed is best)
2 packages frozen mixed vegetables
4 red potatoes, cubed
2 celery stalks, sliced
1/2 yellow onion, chopped
1 garlic cloves, minced or grated
1/4 bell pepper, diced
1 large can whole tomatoes
1 small can tomato paste
2 boxes low sodium beef broth
4 beef (or no-beef) bouillons
1 tsp sea salt
