Homemade Sofrito

Preservative free and easy to make. Sofrito is the base for most Latin American and Caribbean meals. It is used in stews, rice dishes, bean dishes and soups. Sofrito is not a single ingredient, but a tomato base concentrate, accented with garlic, onions, cumin, and jalapenos among other things. An arroz con pollo (rice with chicken), or carne guisada (stewed meat) would not be the same without the fabulous flavors sofrito imparts upon these dishes.

5 large Roma tomatoes diced small
1 jalapeno seeded, cored and diced
1 small onion-diced (about ½ cup)
2-3 minced garlic cloves
5-6 sprigs of cilantro
2 t. of cumin
1 t. paprika
1 t. salt
dash of cinnamon
1 T. olive oil
