Stir-fried Vegetables:

1 Leek
100g (3.5oz) Button Mushrooms
2 Tablespoons Extra Virgin Olive Oil
Broth:
1 liter Vegetable Stock (or 1 liter Water + Vegetable Stock Cube )
3 Garlic Cloves
15g (0.5oz) Fresh Ginger
3 Tablespoons Extra Virgin Olive Oil
1 Tablespoon Soy Sauce
¼ Teaspoon Hot Sauce (or more depending on your taste)
Toppings:
8 Quail Eggs
2 pcs Spring Onions
Fresh Chili (optional)
