Indian Chicken Coconut Korma

An Indian chicken dish with cashews, coconut and raisins.

½ cup Cashews, plus extra to garnish
½ cup Coconut Flakes, unsweetened
1 can (13-14 ounce) Coconut Milk, full fat
2 tablespoons Coconut Oil
salt and pepper, to taste
6 large Chicken thighs, boneless & skinless
?1 Yellow Onion, chopped
1½ teaspoons Cumin
½ teaspoon Turmeric
1½ teaspoons Garam Masala
½ teaspoon Ground Ginger or ginger essential oil (add when done cooking)
1 teaspoon Garlic, minced
1 cup Chicken Stock
? cup Golden Raisins, plus more to garnish
