Irish Meal in a Bowl, Baked Chopped

How much more Irish can this get? Corned Beef, Cabbage (Sauerkraut), Potatoes, Peas, Irish Cheddar and more. Bake it now or make it ahead. That’s the versatility of The Baked Chopped. I chose to put this together early in the AM and bake it when guests arrived. There are so many veggies and healthful ingredients in this Baked Chopped, you’ll need two baking sheets and at least a 13 X 9 Baking dish to contain it all! I used my brand new shiny Lasagna Pan from All Clad!

Bowl/Baking Sheets Ingredients: Chop all into 1 inch uniform pieces.
1 Tablespoon Olive Oil
1 cup Chopped Zucchini
6 Brown Mushrooms, Chopped
1 Red Bell Pepper, seeded and Chopped
1 Fennel Bulb, Chopped
1 cup Chopped Green Beans
1 Leek, Chopped
3 cups Chopped Red Potato
1 teaspoon Thyme
1 teaspoon Dried Sage
1 teaspoon Kosher or Sea Salt.
1/2 teaspoon Freshly ground Black Pepper


Bowl/Sauce Ingredients:
1 15 oz. can Tomato Sauce or 2 cups homemade
1 15 oz. can diced tomatoes, w no salt added
6 oz. Chopped, Sliced Deli Corned Beef. Of course you can use homemade!
1/2 cup Frozen Peas. You don’t even need to defrost them
1 cup Sauerkraut, drained and Chopped
4 oz. Grated White Cheddar Cheese. I used Irish Dubliner. Reserve 1 oz. for topping
1 Tablespoon Apple Cider Vinegar

Zing Factor: For it’s Stealthy/Healthy anti inflammatory properties
1 Teaspoon Turmeric
