Italian Beef Cannelloni made with fresh lasagna sheets.

600 g (1.3 lbs) ground beef
1 onion, finely diced
3 cloves garlic, crushed
400 g (14 oz) can crushed tomatoes
50 g (1.8 oz) can tomato paste
1 cup mushrooms, sliced
1 cup spinach, chopped
1 cup beef stock
1 large carrot, grated
1 tsp dried mixed herbs
salt and pepper to taste
3 fresh lasagna sheets
200 g (7 oz) creme fraiche
1 cup grated cheese
