Italian Wilted Spinach

1 lb. spinach
4 or 5 fresh mushrooms
Slivered Parmesan cheese
Virgin olive oil
Garlic red wine vinegar
Wash, stem, drain, and chop spinach, and put in a saute pan over low heat. Add thinly sliced mushrooms, minced garlic, and shredded parmesan. Integrate olive oil a little bit a a time, until spinach looks wet. Add red wine vinegar to taste, and serve warm.
