Jammy Shiitake Mushroom

Our home creation – a blend of Chinese fried vegetable and Western jammy dessert! The cuisine is so original that even the major ingredient of shiitake mushroom is hard to recognise at the first glimpse… Biting through the crisp outside full of sesame aroma, the teeth touch its tender inside with bursting juice. The sweetness and saltiness form a balanced mix. Mother is really a chef!

1 oz. dried shiitake mushroom (10 oz. after soaked)
2 oz. lemon jam
1 tsp. white sesame, cooked
1/2 tsp. salt
1/2 tsp. ground white pepper
1/8 oz. ginger
1/8 oz. garlic
1 T. cornstarch
6 T. vegetable oil (for deep frying; actual consumption is 3 T.)
Note to site owners: please use 10 oz. mushroom for calculating the weight pet serving, because that is corresponding to weight of cooked dish. Please use 3 T. oil to calculate nutrition information.
Soak the mushroom in cold water for 1 hour, and then squeeze out extra water from it. Use a pair of scissors to shear the cap of the mushroom from the edge into a spiral, long strip, and break the strip into 4" sticks. Dress the mushroom stick with the blend of the cornstarch, salt and pepper. Heat the oil in a pan and fry the dressed mushroom until it turns golden. Drain the oil on a piece of kitchen paper. Keep a little remaining oil in the pan and remove the other. Add the garlic and ginger and saute to bring out the aroma. Add the lemon jam and a little water and stir. When the sauce is fully blended, add the fried mushroom and the sesame, stir fry for 10 seconds to make the sauce evenly wrap the mushroom, and turn off the heat.
