Kabocha Squash Curry

Kabocha Squash makes for the base of this delicious and hearty curry. It is chock full of lentil, tomatoes and spices for a healthy easy meal.

1 c. lentils
2 c. water
2 Tbsp. coconut oil
1 large sweet onion
1½ c. veggie broth
4 c. diced Kabocha (about 1 small squash)
½ c. coconut milk
1 can diced tomatoes
1 c. broccoli, small dice
1 Tbsp. Curry powder
½ Tumeric
1 tsp. cayenne (I like it spicy! However just use less if you're a weenie)
dash of salt
