Here is my healthy version of enchiladas with shredded chicken, enjoy!

Ingredients: ?3 Boneless Skinless Chicken Breasts
1 Red Bell Pepper
1/2 Onion
Cumin, Sea Salt and Extra virgin Olive Oil
A large bunch of Cilantro
Flour Tortillas (you can use multi grain or whole wheat if you want to be even healthier)
Reduced Fat Mexican Blend Cheese
Avocado and Green Onion (to garnish)
one lime (garnish)
For the enchilada sauce:
olive oil spray or extra virgin olive oil
2 garlic cloves, minced
1 or 2 tbsp chipotle chile in adobo sauce, more if you like it spicy
1-1/2 cups tomato sauce
1/2 tsp chipotle chili powder
1/2 tsp ground cumin
2/3 cup fat-free low-sodium chicken broth
kosher salt and fresh pepper to taste
