Here’s another vegan cake recipe for you. I was trolling Pinterest as I usually do, and my lightbulb went off. Lemon and blueberry. Sure it’s nothing new. Lemon and blueberry has been around forever. I’ve even made lemon blueberry muffins here on the blog. But this particular cake is something I’ve never seen. So I gave it a go. It was delicious, rich and extremely sweet. I literally had crumbs and got a sugar rush (probably because I eat such little sugar on a normal basis). My husband and mom

1 box Dunkan Heins lemon cake mix
1 stick of margarine, cut into 8 pieces or 1/2 C coconut oil
1 large can blueberry pie filling
