1 Medium Onion
2 Small Leeks
3 Garlic Cloves
1/4 Cup of Cilantro
1 Delicata Squash
1 Cup Lentils
1 Cup Water
1 Cup Low Sodium Vegetable Broth
8 oz White Mushrooms (approx 1 1/2 cup chopped)
3-4 Strands of Saffron (optional)
1 TBSP Soy Sauce
