Classic Indian mango chutney. Sweet, savory, and everything in between
½ cup Truvia (or 1 cup sugar)
½ cup white vinegar
1 Tbsp flavourless oil (canola or vegetable)
2 cloves garlic, minced
½ medium white onion
2 tsp fresh ground ginger
½ tsp cumin
½ tsp red pepper flakes
¼ tsp cinnamon
1 tsp mustard seeds
3 large mangoes, peeled, seeded, and diced
½ cup white vinegar
1 Tbsp flavourless oil (canola or vegetable)

½ medium white onion
2 tsp fresh ground ginger
½ tsp cumin
½ tsp red pepper flakes
¼ tsp cinnamon

In a large pot, bring vinegar and Truvia/sugar to a simmer, cooking about 5 minutes until Truvia/sugar has dissolved.
