Manzo all’olio, literally “beef in oil”, is an ancient dish that takes its origin from the city of Rovato, which is the gateway to the territories of Franciacorta in Italy.

1 Kg “Priest’s hat” meat

½ onion finely chopped

3 anchovies

1 garlic clove

½ stick butter

4 cups water

1 cup good quality EVO oil

1 tbsp cornstarch

2 sprigs of fresh parsley
