Masala Chai (Tea)

Great for a cold winter day or for soothing a cough.

Milk 2 cups (full cream) hot
water 2 cups
3-4 whole cloves
1/2 cinnamon sticks
1 medium piece ginger (diced)
2-3 whole black pepper (optional)
1/2 star anise/badiyan
3/4 tsp green cardamoms powder
4-5 tsp black tea (loose)
4-5 tsp sugar (less or more)
In a tea pan combine all ingredients except milk and sugar, boil for 10 minutes. Strain. Add the hot milk, boil for another 2-3 minutes on low heat and mix with your choice of sweetener or sugar.
